Why do we use both sensors and switches to indicate the same physical quantity (pressure or temperature)? And what is the scientific difference between the two types of instruments?

Sometimes we need to know the specific value of the physical quantity, for example we need to know what is the exact temperature of the pump casing, or the pressure value at the station input; in these cases we have to use sensors. Another advantage of using both sensors and switches is to provide some sort of redundancy; if one has failed the other can overcome the fault.

Sensors treated by the controller as Analogue Inputs AI, and switches are treated as Digital Inputs DI.

The main difference between two techniques is at the type of the signal to be measured i.e. the input to the controller; the switch sends a digital input signal DI, but the sensor sends an analogue input AI; this of course will lead to the appropriate choosing of the input port or module to the controller, and this is the main engineering difference between sensors and switches.

it is difficult to write about this issue with arabic since no refrence with arabic also if we write with arabic most of it willn't be clear in understand the whole meaning.

الموضوع شيق كما يبدو من مقدمته,,
ولا أعتقد بوجود مشكلة في كون الموضوع باللغة الانجليزية خاصة أن لغتك التي كتبت بها الموضوع سهلة ومباشرة,,
لكن لو كانت هناك أي مصطلحات أو أشياء أخرى تحتاج للترجمة والشرح فنرجو منك أن تحرص عليها, إتماما لفائدة الموضوع.
أيضا لو توفرت لديك صور ستكون مساعدة جدا لفهم الموضوع,,

i can add some thing about this not far from last answer
switches are on off devices that conected to stop or start some devices and may connected to the shutdown system
but sensors are sensing the progress of the measurement
